I used to only make my pizzas in a cast iron skillet, and I still think it’s one of the best ways to make pizza…. But it’s really hard to top the flavor and texture you get from a Neapolitan style pizza! These tips are key to making sure you get that perfect pie! 1. How you prepare the dough is very important! I always recommend making your own, but if you can’t you can always order quality frozen dough online from @Ooni Pizza Ovens and a few other vendors! For this style pizza, I use 8-9 oz dough balls, and I start by getting it coated in a 50/50 mix of ap flour and semolina. Then I start from the center and press the dough ball out to form the pizza. Watch the techniques I show in the video for the best result!! 2. Toppings! I love a loaded pizza… but too many toppings can really take away from the quality ingredients used to make the dough and sauce as well as take away from the ingredients you do choose to add in moderation. Don’t over sauce the pizza, and keep the toppings to a minimum if you want the best end result! 3. Temperature matters so much! I always recommend investing in an infrared thermometer, it makes checking the pizza stone temp easier! If you are using a pizza oven, the stone should be at 750°F or so, with the ambient temp being up to 1000°F. Place the pizza in and rotate every 20-30 seconds until all edges are cooked evenly. Pay attention to the bottom, and when that is cooked through, place the pizza peel between the stone and the actual pizza to prevent it from burning while the pizza finishes up!
