Biryani Battles - Sri Lankan Biryani 🇱🇰 A personal favourite of mine - A dish close to my heart - bursting with flavours, the unique Sri Lankan spice mix dances on your taste buds, enhanced by the sweetness of coconut milk. A must try! 🥥 . . INGREDIENTS: Marinade - 500g Chicken thighs - Sri Lankan Curry powder - 1 tbsp of Coconut milk - 1 tsp of Chilli Flakes - Squeeze of lime juice - 1/2 tsp Tumeric Powder - 2 sprigs of curry leaves Rest of the ingredients: - 1 tsp coriander seeds - 3 cloves - 3 cardamom - 1 inch cinnamon stick - 7 Curry leaves - 1/2 tsp pepper - 1/2 tsp cumin seeds - 1/4 tsp fenugreek seeds - 1 tsp of pepper - 2 sprigs of curry leaves - 1 tsp minced ginger and garlic - 4 green chillies - 2 pieces of lemon grass - 1/2 cup of sliced onions - 1/2 tsp of tumeric powder - More coconut milk - 1 tbsp of Sri lankan curry powder - 1 tsp of red chilli flakes - 1 tsp of coriander powder - 1 tsp of lime juice - fried Onions Rice: - 2 pieces of lemon grass - 2 cups of basmati rice and cinnamon INSTRUCTIONS: 1. add all the the marinade ingredients and let that marinate in the fridge for and hour or over night 2. Next add coconut Oil to a heavy bottom pot and fry your whole spices, lemon grass, pandan leaves and curry leaves for 3 minutes. Then add sliced onions for 3 minutes 3. then add Minced ginger and garlic, along with green chillies, and fry for 2 minutes 4. Now add your spices (Thats pepper, tumeric powder, red chilli flakes, coriander powder and sri lankan curry powder) 5. Now add coconut milk and lime juice and cook for 20 minutes 6. Now move onto the rice, add boiling water to a large pot and along with lemon gross and cinnamon and boil this until 50% cooked (3-5 minutes) 7. Finally layer with your chicken with rice, coriander, Fried onions and repeat. 8. Next cover this and cook on medium low heat for 45 minutes 9.
