In other news, I rediscovered my love for frittata, and finally got into The Traitors like 6 weeks late. Recipes from this video are below! Meatloaf (pasting my OG recipe below! For this version, I omitted the sauteed onions, the fresh herbs and some of the spices I didn’t have here.) - 2lbs 80/20 ground beef - 1 medium yellow onion, diced - 3/4 sleeve of ritz or saltine crackers, crushed fine - 1 large egg - 1/4 cup tomato paste - 8oz can of tomato sauce - 1 Tbsp Worcestershire sauce - 1/2 tsp dry mustard powder - 2 tsp Lawry’s seasoned salt - Salt & pepper to taste - 2 tsp fresh parsley, minced Bake at 325 for ~1 hour and 10 minutes, until it reaches 160 degrees internally. Banana Bread Pancakes - 1 1/2 cups pancake mix - 1 cup milk - 3 very ripe bananas, mashed - 1 tsp vanilla - 4 Tbsp melted butter - 1/8 tsp fresh nutmeg - 2 tsp pumpkin or apple pie spice - Pinch of salt - Extra butter for frying (Like I said, I’m still working on this one but listing ingredients here in case anyone wants to give it a try!)
