Fussy eaters? Not anymore! 🤩 Hide all your veggies in this nutritious sauce, sandwiched between fresh Earth & Wheat tortillas 🫓🥕🧅 Ingredients: Any veg that's in your Earth & Wheat Combi Box x2 Earth & Wheat tortillas (per quesadilla!) 1 bay leaf (optional) 1 tsp coriander seeds (optional) 1 tsp salt Any aromatics in your kitchen (we used paprika, garlic powder, chilli flakes and garam masala) 2 tbsps tomato puree Cheddar or mozzarella cheese 1 tbsp vegetable oil Method: 1) Collect all your veg scraps, add to a pan and cover with water. Mix in the salt and bay leaves/coriander if you're using them, and simmer with the lid on. 2) Add the oil to a pan on medium heat, and fry off your aromatics and tomato paste, then dump in all your chopped veg. Mix well before covering in your veg stock and simmer until the veg is soft, then blend to your desired consistency. 3) Layer in a frying pan tortilla, cheese, sauce, cheese and another tortilla. Dry-fry on a medium-high heat until the cheese is melted and the tortillas are crispy.
