Vietnamese Savory Crepe // Bánh Xèo Makes 8 10” crepes Ingredients: 1 cup rice flour 1/2 cup corn starch 1 teaspoon salt 1/4 teaspoon turmeric 2 cups chilled carbonated water 1/4 cup coconut milk 1/2 cup chopped green onions 1 large onion, thinly sliced Neutral oil for cooking Salt and black pepper to taste 2 lbs shrimp, peeled and deveined 1 lb pork belly, thinly sliced Mung bean sprouts For the Dipping Sauce: 1 quart water 1 cup sugar 2 tablespoons salt 1/2 teaspoon MSG (optional) 4 tablespoons fish sauce 1 Thai chili, minced 2 garlic cloves, minced 1.5 tablespoons lime juice For Serving: Lettuce leaves Fresh mint leaves Perilla leaves Cilantro leaves Sliced cucumber Pickled carrots & daikon Instructions: 1. In a bowl, whisk together rice flour, cornstarch, turmeric powder, carbonated water, coconut milk, and salt until smooth. Stir in chopped green onions. Let the batter rest for about 30 minutes. 2.
