Prep time- 15 minutes Cook time- 25 minutes Total time- 40 minutes Serves- 4 INGREDIENTS For Meatballs ⬇️ 1 lb. 93 % lean ground chicken or turkey 1 large egg 1/3 cup grated Parmesan cheese 1/4 cup almond flour 2 tbsp lemon juice 1 tbsp lemon zest 1 tbsp minced garlic 1 tbsp fresh chopped dill 1/2 tsp salt 1/4 tsp red pepper flakes For Creamy Spinach ⬇️ 1 tbsp salted butter 1 tsp minced garlic 12 oz. fresh spinach 2 oz. light cream cheese, cubed 1/3 cup whole milk 1/4 tsp salt 1/4 tsp pepper DIRECTIONS: ✔️Preheat oven to 425ºF. Line a baking sheet with aluminum foil and place a cooling rack on top. Lightly grease rack with cooking spray. Combine ingredients for meatballs in a mixing bowl and mix thoroughly to combine. ✔️Form into 16 meatballs using hands and place on cooling rack lined baking sheet. Bake for 22-25 minutes or until golden brown and cooked through. ✔️While meatballs bake, heat butter over medium heat in a large skillet. Add garlic and sauté for 30 seconds. Add cream cheese, milk, pepper, salt and nutmeg. ✔️Once cream cheese is mostly melted, reduce heat to medium-low. Stir in half of the spinach. Cover with lid and cook until wilted, about 3 minutes. Add remaining spinach and stir well. Cover and cook 3 minutes longer. Remove from heat. ✔️Cool meatballs at room temperature for 5 minutes.
