This latte was inspired by the Filipino pastry called Ensaymada, and the Korean sweet potato latte. I once tried the sweet-and-savory Ensaymada with a ube swirl and a heap of cheese on top, and fell in love. So I got some ube condensed milk and purple sweet potato to whip up the nutty, hearty latte, and topped it with a dollop of cream cheese foam. Here’s the full recipe: Purple Sweet potato Latte: 1 tsp ube condensed milk, 1 cup oat milk 100g purple sweet potato 1 shot of espresso Cream cheese Foam: 1 Tbsp cream cheese 1 tsp sugar Pinch of salt ⅓ cup oat milk Blend the oat milk, ube condensed milk, and sweet potato.
