Lemon Tiramisu: Lemon syrup: 2 lemon quartered 350ml water — blitz in blender high speed for 10s — sieve the lemon juice Add 80g sugar into Lemon juice + lemon essence (if u like it really lemony) into a sauce pan — cook until sugar melt, then let cool . Cream 130g sugar and 1/2 lemon zest — mix — Using a whisk, beat 2 eggs + 1 egg yolk into sugar until fluffy Add into it 500g mascapone cheese one spoonful at a time . Assemble 300g sponge finger, soak in lemon syrup 3-4 seconds Arrange in rectangular dish Spread cream, repeat sponge finger layer then cream. Wrap inncling wrap into fridge overnight.
