šWild Violet Jellyš Ingredients: *2 cups violet flower blossoms *4 cups boiling water *2 tbsp lemon juice *1 box low sugar pectin *4 cups sugar *1/4 tsp butter Directions: *Pick 2 cups of violet flower blossoms, removinā any stems and discardinā any funky ones *Rinse flowers in a strainer and add clean flowers to a quart jar *Cover flowers with 4 cups of boilinā water (ya might have to burp the baby a few times and add a lilā more water until it reaches the top of the jar) and put a lid on it *Once cooled, place the jar into the fridge and let it all steep for 12-24 hours *Strain the flowers from the liquid, compost the flowers, and add 2 tbsp of lemon juice to your now strained violet tea (admire the color change from blue to purple) *Sterilize 6 half pint jars in water bath canner *Add violet tea to a pot and bring to a boil *Add box of low sugar pectin and bring to a rollinā boil for 1 minute, stirrinā constantly *Drop in 1/4 tsp of butter, then add 4 cups of sugar and bring to a rollinā boil for another minute, stirrinā constantly (I donāt care if yer arm is tired) *Remove jelly mixture from the heat *Ladle hot mixture into sterilized jars leavinā a quarter inch of head space *Wipe the rim of your jar with a damp towel, top with flat, and twist on band until just finger tight *Add jar to your canning rack and repeat until the rack is loaded *Lower jars into canner, cover, with lid, and process in boilinā water for 10 minutes *Lift rack and carefully transfer jars to a towel to sit undisturbed for 24 hours to seal #violet #fyp #foryou #howto #recipe #foraging
