Chocolate Bark Chocolate bark is simply melted chocolate mixed with flavorings (nuts, dried fruits, toffee bits, pumpkin seedsā¦) & cooled until it hardens into a candy bar-like ābarkā. Try white chocolate contrasted against tart dried fruits like cherries or cranberries too. But my favorite? The texture & slightly minty heat of crushed candy canes with slightly bitter dark or semi-sweet chocolate. Put the candy canes into a sealed plastic bag & lightly crush with a rolling pin or wooden spoon. I'm making close to a double recipe here. ššš Ā 3-1/2 ounces semi-sweet chocolate 4-5 medium, lightly crushed, candy canes Ā 1. Melt chocolate: Place a heatproof bowl on top of a pot of simmering water to create a makeshift double boiler. Place chocolate in the bowl & warm until it melts. 2. Make the bark: pour/spread the melted chocolate on a lightly greased baking sheet (or fitted with a Silpat/parchment paper) . Immediately sprinkle with the crushed candy canes. Add another dry topping if you like. (nuts, dried fruits, candies) Refrigerate about 30 minutes & up to several hours. Ok so i may have used a little more butter than the recipe calls for ...š Turkey in Cheesecloth with Quick Gravy My mother did this method my whole childhood & learned from the great Julia Child. The idea is to protect the breast meat for the majority of the cooking time since it is leaner and more delicate. Then, you gently peel off cheesecloth to let it brown as it finishes cooking. 14-16 pound turkey, innards/neck removed Ā½ - 1 stick unsalted butter, melted 1 large doubled piece of cheesecloth Ā Gravy: Ā½ cup dry Marsala (or Sherry) 2 tablespoons Dijon mustard 5-6 cups low sodium chicken stock Ā 1.Ā Ā Ā Ā Ā Ā Ā Ā Ā Preheat the oven to 450F. 2. Stuff turkey: Place the turkey on a flat surface, season all over with salt & pepper & fill the cavity with stuffing. Tie the legs closed with kitchen twine by wrapping them around the drumsticks & pulling them closed like youāre tying a shoe. (Oil the rack so the turkey doesn't stick to it.) Transfer the turkey to the rack with a fitted roasting pan. 3. Cheesecloth: Soak the cheesecloth in the butter. Brush any remaining butter on top of bird & cover breasts with cheesecloth to prevent top skin from burning & place roasting pan in center of oven. Roast 15 minutes then lower oven to 350F. Cook bird about 12 minutes per pound. After about 2 hours cooking, remove the cheesecloth from the top & return turkey to the oven. Place neck in the chicken stock for the gravy in a pot & simmer gently on top of stove as turkey cooks. The stock should reduce by about half. Season with salt & pepper, if desired. 9.Ā Ā Ā Ā Ā Ā Ā Ā Ā How do you know when done? The temperature of thigh (where meat is thickest & takes longest to cook) meat should register 160-165 F when tested with a thermometer. Rest 20-30 minutes before removing stuffing & carving. 10.Ā Ā Ā Ā Make gravy: Place roasting pan over the burners of stove, add mustard & marsala to the pan & warm it. Scrape bottom to get tasty bits as marsala reduces. Reduce stock until thick. Add a little more mustard if needed. Note: Can thicken with flour or roast a few onions till tender, purĆ©e & whisk in to thicken. #food #turkey #chef #fun #easy #tasty

Here is one item you can check off your list this week. I make cranberry sauce at least a few days in advance & let it sit in the fridge before the big day. This video shows the moment where the cranberries are cooked enough. Combine in a medium pot: 1 bag fresh (or frozen)cranberries 1-1/2 cups sugar 1/-cup water 1 cinnamon stick 1 teaspoon cinnamon 1/2-teaspoon ground allspice 1/4-teaspoon nutmeg 1 small orange, zest & juice. Simmer 8-10 minutes until cranberries start to burst. Strain out cranberries & set them aside. Just simmer liquid over medium heat until syrupy, 3-5 minutes. Stir liquid back into cranberries. Cool.
