Come spend a day with us in Ramadan! 🤍 The beautiful traditions and spirits of Ramadan that were in my Parents household, are now in mine. Just like my parents taught us the significance of fasting, the beauty of prayer and the joy of breaking our fast together, we will do the same with our children 🤍 I loved being in the Kitchen with my Mum and now my daughter loves being in the kitchen with me, we made this Kabsi Rice topped with Chicken Maryland and it was delicious! 😋 Recipe ⤵️ 🔹Ingredients: 1/3 Cup Canola Oil 1 Onion 4 Garlic Cloves (crushed) 2 Carrots (grated) 1 Cup Raisins 3 Cups Basmati Rice Shan Bombay Biryani Seasoning mix 1L Chicken Stock 2 Cups Water Salt (to taste) 5 piece Maryland Chicken Shan Chicken Tikka seasoning mix 1/2 cup Olive oil Juice of 2 lemons Salt 🔹Method: 🔸Pre-heat oven to 200° Celsius. 🔸Marinate Chicken with Olive Oil, Lemon, Salt and half the packet of Shan Chicken Tikka seasoning mix. 🔸Rub the seasoning all over the Chicken and place in the oven for 30 minutes. 🔸Once the chicken skin is crispy and golden, cover with baking paper & foil and return to the oven for a further 30 minutes. 🔸Wash and soak the Rice for 10 minutes. 🔸Cook the onion and garlic in canola oil for a couple of minutes. 🔸Add the Carrot and cook for a further 5 minutes. 🔸Add the raisins and cook for a few minutes. 🔸Add the strained rice. 🔸Season with half the packet of Shan Biryani mix and 1tsp Salt. 🔸Cover with Chicken stock and Water. 🔸 Bring to a simmer, lower the heat, cover and cook until rice is done. 🔴Please note: The seasoning mix (for both Rice & Chicken) is very Chilli! Please add it according to your chilli tolerance. How to plate: Place the Rice on a platter, top with the Chicken and garnish with Pinenuts, Almonds & Cashews. Enjoy! 🤍 #PassitOn #ramadanwithshan
