Egg fried rice.. if you cook too much rice cool it quickly by popping it in a tray maximising that surface area so that it can cool fast. Pop it in the fridge or freeze then use at your will (is that the right saying?) Anywaaaaay… Don’t be scared of reheating rice, just make sure that it is piping hot all the way through, in a wok or frying pan over a high heat with a little bit of moisture you will be good to go in 5 minutes. I kept this one simple as sometimes an egg fried rice is nice simple… you add whatever you fancy to this pork, chicken, prawns, beansprouts, peas, mange tout Rodney you name it!! I went with a simple base of spring onion, garlic, a bit of knuckle and chilli - I fired that off in some veg oil over a “high heat” (as hot as my induction allowed me) - shuffled it to one side added whisked egg and just mate rubbery scrambled eggs, mixed it all together with the rice and seasoning with soy sauce, sesame and MSG!
