These are insanely delicious 😋 Servings: 4 zucchini (4-8 servings) • 4 small/medium zucchini Salt 3/4 cup ricotta cheese 3/4 cup feta cheese, crumbled 3/4 cup Parmesan cheese 1/3 cup chopped onion 1/2 cup chopped spinach 1/2 cup chopped tomatoes Pinch salt Pinch pepper 1 egg • 1️⃣Preheat the oven to 400. Line a small baking sheet or casserole dish with parchment paper and set aside. 2️⃣Create a boat shape in the zucchini by slicing into each side, lengthwise, then removing the tops. Carefully use a spoon to scrape out the seeds. Sprinkle the tops with salt and let them sit for 10 minutes. *save the extra zucchini for later.3️⃣Make the cheese mixture.
