My god, this was an incredible sandwich. Roasted red pepper vodka sauce (without the vodka… oops) chicken parm sandwich FOR THE CHICKEN 4 Chicken breast cutlets, pounded thin 2 eggs Salt & pepper 1 cup flour Paprika Garlic powder Onion powder 1 cup panko bread crumbs 1/4 cup freshly grated Parmesan Fresh or dried parsley 1 cup neutral oil Pound the chicken cutlets thin. In a shallow bowl, beat the eggs and season with salt and pepper. In another shallow bowl, add flour and season with salt, pepper, paprika, garlic powder, and onion no powder. In a third shallow bowl, add panko with Parmesan, salt, pepper, garlic powder, onion powder, and parsley. Heat a skillet over medium high heat and add about 1/2 inch of oil. Bring oil to 350°F. Dip each chicken cutlet in flour first, then egg, then panko. Fry each piece for 3-4 minutes per side, until golden brown. Transfer to a wire rack (this is important - this will help keep the chicken crispy. Laying on paper towel or a plate will make the breading soggy). FOR THE SAUCE 1 shallot, minced As much garlic as ya want, minced 2 tbsp tomato paste (which I forgot lol) 2 tbsp vodka (which I also forgot) 1 28oz can peeled whole tomatoes 1 16oz jar roasted red peppers, blended Salt & pepper 1/4 cup heavy cream Heat 1-3 tbsp olive oil in a large skillet over medium heat. Add shallot and cook until translucent, 3-4 minutes. Add garlic and cook 30 seconds. Add tomato paste and cook for 1-2 minutes, deepening in color. Add vodka and cook until alcohol burns off. Pour in tomatoes and use a wooden spoon to crush them. Pour in blended roasted red peppers. Bring to a simmer and add heavy cream, stirring until incorporated. FOR THE SANDWICH Chicken Vodka sauce Ciabatta bread Your favorite pesto Fresh mozzarella set your broiler to high. Place chicken on a wire rack situated inside a baking sheet. Spoon vodka sauce on top of chicken, then top with sliced mozzarella. Broil for 5 minutes or until cheese is toasted and bubbly. Keep a close eye on it so it does not burn. Toast the inside of ciabatta bread. Add pesto to bottom slice. Add chicken + more sauce. #recipe #chickenrecipe #cooking #foodie
