Mueller Dutch Oven Beef Stew Recipe Flour to coat beef 2 lbs stewing beef 1 48 oz box beef Broth. I ended up using chicken broth. I didn’t realize it until I got home, but I picked up the wrong one! But it was still amazing! Carrots Celery Onions Mushrooms Potatoes Peas I used about 1/2 bag Corn I used about 1/2 bag 2 Tbsp Tomato paste 1 1/2 cups Red wine I loved the Apothic Merlot. 2-3 Tbsp Worcestershire sauce Seasonings, add desired amount. I used approximately a little more than this: 1 Tbsp garlic powder 1 Tbsp onion powder 1 Tbsp Italian seasoning 1 sprig rosemary Fresh thyme 2 bay leaves Seasoned flour Flour Garlic powder Onion powder Salt and pepper Corn starch slurry. You can use a flour slurry if you do not have cornstarch. 2 Tbsp corn starch or 2 Tbsp flour Water Directions Cut stewing beef into bite-size pieces about 1 inch. Coat the stewing beef in flour and seasonings. I used garlic powder, onion powder, salt and by pepper. Roll your beef cubes in the seasoned flour mixture. Add oil to the bottom of your pot. Brown your beef. The flour helps to give it a crusty coating on the beef. It also helps to thicken the soup. Once your beef is browned, not fully cooked through, take out of the pot and set aside. Add more oil to the bottom of your pot to sauté your vegetables. Add your onions, celery, carrots, mushrooms and sauté a few few minutes. Add your garlic. Cook for a couple more minutes. Add tomato, tomato paste and sauté for about two more minutes. Add your red wine to deglaze the bottom of the pot. It will help bring up the fond from the bottom of the pan. Fond is flavor. You will notice that the vegetables release, moisture, and help to pull up the fond also. If you don’t want to use wine, you can use your broth to deglaze. as you can see in the video I did not add my wine until later. That is only because I was at my daughters house and I could not find a wine opener so I had to order one and I was waiting for it to arrive lol. in fact, I thought the stew tasted even better adding the wine in later. Either way it’s fine. Next, add your broth, Worcestershire sauce and seasonings. I used garlic powder, onion powder, Italian seasoning, salt and pepper. This is the time to season up the stew. Add your fresh herbs and simmer for about 30 minutes with the lid on, preferably. It will help keep the moisture in. After 30 minutes, you’re going to add your potatoes. Simmer an additional 30 minutes on low with the lid on. Next, you’re going to add your cornstarch slurry. If you don’t have cornstarch, you can use a flour slurry. This is a good time to add your frozen vegetables if you’re gonna add them. I added peas and corn. About 1/2 bag each and cooking/simmering an additional 10 to 15 minutes or until the stew is thickened it doesn’t take very long. It is important to simmer the stew on low. This will give you a tender beef. If your beef is not as tender as you desire, continue simmering until it’s to your liking. Beef Short ribs recipe 2 lbs boneless beef, short ribs Olive oil Salt & pepper to season each side of the beef 1 onion 8 oz mushrooms sliced 4 cloves garlic minced 2 cups red wine 2 cups beef broth 2 tbsp tomato paste 1 tbsp brown sugar 2 sprigs rosemary 2 sprigs thyme Cornstarch slurry 2 tbsp corn starch 3 tbsp water Directions Season beef, short ribs with salt and pepper on each side. Heat your olive oil in the bottom of your pan and sear all sides until brown. Once brown on all sides set aside. Add your onions and mushrooms to the pan that you seared your beef in. Sauté for about five minutes until ingredients are soften. Add red wine to your pan and scrape the bottom to remove any brown bits. Stirring the beef broth, tomato paste, brown sugar, rosemary, and thyme. Return your short ribs to the pan and cover. Bake it 325° for about two hours or until meat is tender. About 15 minutes before the ribs are done mix your corn starch, slurry with 2 tablespoons of cornstarch and about 3 tablespoons of water and add to the pot. This will thicken the liquid making a delicious gravy! Serve your ribs over mashed potatoes and garnish with fresh parsley optional.
