Preheat oven to 350°F and line baking sheets. 2. In a medium bowl whisk together flour, baking soda, baking powder, espresso powder, and salt. Set aside. 3. To a large bowl add butter, granulated sugar, and light brown sugar. Beat until light and fluffy. 4. Add egg, egg yolk, and vanilla. Mix until combined. 5. Slowly mix in the dry ingredients until just combined. 6. Scoop the dough with a 3 Tbsp cookie scooper and place on a lined baking sheet. 7. Bake 350°F for 9-11 minutes. Let the cookies cool before frosting. For the frosting: 1. In a large bowl beat the heavy whipping cream, mascarpone cheese, powdered sugar, and vanilla until stiff peaks form. 2.
