Chorizo Vegetable Soup 🍲 1 lb of chorizo 1 onion diced 2 carrot peeled and diced 2 celery sticks diced 5 Yukon gold potatoes chopped 2 tbsp tomato paste 1/4 cup frozen peas 1/3 cup frozen corn 1 can of cannaleni beans 4 cloves garlic 1 trap crushed red pepper 2 tap oregano 1 tsp garlic salt 2 tsp smoked paprika 5 cups vegetable broth 1. Start by cooking your celery, carrot, and onion with 1 tbsp EVOO until soft. About 7-8 minutes. 2. Remove the vegetables and add in the chorizo. Cook on medium high. You want the bottom to brown and bit and the chorizo to brown too. 3. Add in tomato paste, garlic, and herbs. Cook for about 2-3 minutes. 4. Add in your broth a little at a time scraping up the brown bits on the bottom. Add in all the broth. 5. Throw your corn, peas, beans, and potatoes in. Cover and simmer for 10-15 minutes. Roasted Parmesan Tomato Soup 🍅 28 ounces of tomatoes 1 onion chopped 1 cup diced celery 1 cup diced carrot 1 head of garlic 2 bay leaves 1/4 cup basil 1 cup fresh grated Parmesan 4 cups chicken broth 1 cup half and half 2 tsp oregano 2 tsp crushed red pepper 2 tsp garlic salt 2 Tbsp EVOO 1 Tbsp of balsamic vinegar Salt and pepper. Chop up your tomatoes, onions, and cut your garlic head in half. Add to a foil lined pan. Drizzle with EVOO, oregano, crushed red pepper, and a splash of balsamic vinegar. Mix and roast on 425 for about 25 minutes or until browned. Dice up your celery and carrots. Add a couple tbsp’s of EVOO to your pot. Let soften for about 6-7 minutes. Once your tomatoes, onions, and garlic are done. Add them to the pot. Add in the chicken broth, bay leaves, and basil. Let simmer for about 10 minutes. Remove the bay leaves, and immersion blend. You can blend until smooth or leave it a little chunky. * I add my can of tomatoes after mixing because I like it a little chunky. Add in the half and half and fresh grated Parmesan. You could serve it here topped with basil and more Parmesan! If adding the pastry: 1 pkg of puff pastry 1 egg yolk Which your egg yolk and add a little around the rim of your oven safe bowls. Use a bowl and cut your pastry a little bit wider than the bowl. When adding the pastry to the bowl make sure to pull it tight. Pinch around the edges. Paint on your egg wash. I add some fresh grated white cheddar, sprinkle of Italian seasoning, and sprinkle of garlic powder. Marry Me Chicken Gnocchi Soup 🐓 1 lb of chicken tenders or breast 1 pkg of gnocchi 1tsp garlic powder 1 tsp paprika 1 tap onion power 1/2 tsp salt 1/2 tsp pepper 2 Tbsp EVOO 4 cloves garlic minced 2 tbsp flour 2 tbsp tomato paste 1 yellow onion diced 3 celery sticks diced 6 oz sun-dried tomatoes chopped 2 cups of spinach 6 cups chicken broth 1 cup heavy cream 1 cup fresh grated Parmesan 1/4 cup basil Mix all the seasoning with your chicken. Sear on medium high heat in a Dutch oven with EVOO . I like to sear for a couple of minutes on one side. Then flip it. Turn off the heat and cover with just a slit open for steam to release. Let that sit for about 8 minutes. Once done remove the chicken. Add in your onion, celery, and sun-dried tomatoes. There should be enough leftover juice and oil from the sundrieds, but if your pan is dry add a bit more EVOO. Let this cook until onion are translucent. About 5 minutes, stirring as needed. Add in your garlic and cook for 30 seconds. Add in your tomato paste and flour. Mix together. Add in your chicken broth a little at a time. You should have a fond built, so scrap up all the bits. Add in all the broth. Cover and reduce to low. Let cook for 10 minutes. Add in your heavy cream, spinach, gnocchi, and fresh grated Parmesan. Cook about 5 minutes and add back in your diced chicken. My most requested soup summer or fall!! 3 medium zucchini cut in chunks 1 yellow squash cut in chunks 1 yellow onion diced 3 cloves of garlic minced 2 sprigs of rosemary finely chopped 3 cup chicken stock 2 Tbsp Italian seasoning 2 tsp of red pepper flakes 1/4 cup sour cream Salt and pepper EVOO Add Tbsp of EVOO to your pot. Add in your onions and cook until starting to turn golden. Add the garlic, rosemary, red pepper, Italian seasoning and let cook until fragrant, a couple of minutes. Add in your zucchini and squash. Let some of them brown to get some flavor on the bottom. Add in your chicken stock and scrap up any bits on the bottom. Bring to a boil. Let it simmer for 25-30 minutes. Use your immersion blender to blend to the consistency you like. Add in your sour cream. Add salt and pepper to taste. Top with Parmesan, sour cream, red pepper, or EVOO.
