Apple fritter cake RECIPE: For the apples: 2 tbsp butter-melt it 3 and 1/2 cups peeled apples diced 1/2 c light brown sugar 1 tsp cinnamon (Cook in a skillet for 8 mins) Cake: 3/4 c brown sugar 1/2 cup (1 stick) unsalted butter melted 1/2 cup veg oil 1/2 cup milk 2 tsp vanilla 2 eggs Mix it! Then add in: 2 and 1/2 cups flour 1 tsp baking powder 1 tsp baking soda 1/2 tsp salt 1/2 tsp cinnamon 1/4 tsp allspice Mix! Reserve 1/2 cup of the apples/juice and add the rest of the apples in the cake and fold them in. Pour into a lined parchment paper and sprayed 8x8 pan. Add the 1/2 cup of apples all over the top and sprinkle 2 tbsp brown sugar over the top. Bake 350 for 50-60 mins until a toothpick comes out clean.
