One of my favorite fall recipes! My family waits for the cooler months because I finally whip out these recipes! Welcome to my soup series! This recipe has been modified from so many different recipes it is hard to give credit to just one chef so I’ll tag my favorites! Recipe: 3 large carrots chopped 3 celery sticks chopped 1 potato 1 onion Fresh garlic 1 tbsp butter Chicken breast (seasoned with onion powder, garlic powder, Italian seasoning, salt) Sun dried tomatoes 3 tbsp tomato paste 6 tbsp chicken bouillon (or chicken stock works too!) 6 cups Water 1 tsp Italian seasoning 1 tsp salt 1 tsp dried basil 1 tsp dried parsley 1/2 tsp pepper 1/2 tsp red pepper flakes Noddles of choice! Cook seasoned chicken breast for 4-5 minutes until fully cooked Cook pasta of choice Add in 1 tbsp sun dried tomato oil Sauté onion until translucent and fragrant Add in chopped vegetables cook for 5 mins Add butter and garlic , cook for 3 minutes Add in tomato paste and cook until dark red Add in chicken bouillon with water Stir in seasoning Add in chicken and cooked pasta Let simmer for 20 minutes Add in fresh herbs Toast up some Italian bread and serve!
