Marry Me One Pot Chicken Soup! I will be making this every month because its THAT good! Even better, my one year old loved it too! Ingredients: - 1 tbsp oil from sun dried tomatoes jar - 1/2 cup sun dried tomatoes, chopped - 1 small/medium onion, diced - 4 garlic cloves, diced - 3 tbsp tomato paste - 1 (32 oz) container chicken bone broth - 1 (32 oz) container chicken broth - 1 cup heavy whipping cream - 1 tsp dried basil - 1 tsp salt (adjust to your taste) - 1 1/2 tsp Italian seasoning - 1 tsp garlic powder - Pinch of chili flakes - 2 cups (8 oz) medium shell pasta - 1 large handful roughly chopped spinach - 2 cups cooked & shredded chicken (rotisserie works well) - 8 oz cream cheese, softened & cubed - 1/2 cup shredded Parmesan cheese Directions: 1. In a large pot heat 1 tbsp of oil from the jar of sun dried tomatoes. Add in your diced onion and garlic. Stir often for 4 minutes. 2. Next add tomato paste and sun dried tomatoes for 2 minutes. Then pour in the broth, cream and seasonings. Bring to a boil over medium/high heat. 3. Once it’s boiling add in the pasta and reduce to medium stirring occasionally until the pasta is done. 4. Reduce heat to low and add in the chicken, spinach, cream cheese, and parmesan. (The cream cheese melts better if it’s cut into chunks) 5.
