Remove from heat and mix in the pecans. Set aside to cool. For the cookies: 1. Preheat oven to 350°F. 2. In a medium bowl whisk together the flour, cinnamon, baking powder, baking soda, and salt. Set aside. 3. In a large bowl beat the butter, granulated sugar, and brown sugar until light and fluffy. 4. Add the egg and vanilla. Mix until combined. 5. Roll out the chilled pie crust into about a 12-inch circle. Transfer to a 9-inch pie dish and trim the edge of the dough or fold the excess under. Cover and refrigerate while you make the filling. After 50 minutes have passed, remove the pie shield and continue baking another 10-20 minutes so that the edges get nicely golden. Allow pie to cool for about 3 hours so that it sets and makes it easier to cut slices.
