Ingredients: * 3 pkgs Momofuku Soy & Scallion Noodles * 1 lb Ground Pork or Chicken * 3 Tbsp Olive Oil * 1/3 Cup Gochujang * 2 Tbsp Soy Sauce * 1 Tbsp Rice Vinegar * 1 Tbsp Sesame Oil * 4 Cloves Garlic - Minced * 1 1/2 tsp Ginger Paste * 3 Tbsp Brown Sugar * 2 Cups Baby Spinach * 1/2 Cup Fresh Basil * Scallions * Reserved Pasta Water Directions: 1. Bring a pot of water up to a boil. 2. In a bowl combine the Gochujang, soy sauce, rice vinegar, sesame oil, garlic, ginger & brown sugar together. Set aside. 3. Add the olive oil to the pan & start to cook the pork/chicken over medium heat. Once browned add in the sauce mixture & continue to cook until the meat has caramelized on medium-low heat. About 4-5 minutes. 4. Drop the noodles into the water & cook for 3 minutes. Drain the noodles - reserving some of the pasta water. 5. Add the noodles to the pan with the meat along with two of the Soy & Scallion sauce packets. Add in the spinach & the basil along with a tablespoon or two of the pasta water. Combine well - adding more water if needed to loosen the sauce if desired. 6.
