Beat the lard or butter: Using a mixer, beat until fluffy. Make the basic dough: Mix the lard, baking powder, and water into the corn flour until the dough is smooth and spreadable. Divide the dough into two portions. Sweet dough: Add sugar, condensed milk, vanilla, and food colouring to one portion of the dough. Mix well and add raisins if desired. Savoury fillings: Green sauce: Mix shredded chicken with green sauce and cook for 3 minutes. Mole: Mix shredded chicken with mole sauce and cook for 3 minutes. Assemble the tamales: Sweet tamales: Spread sweet dough on a softened corn husk and wrap tightly. Savoury tamales: Spread the basic dough, add chicken with green sauce or mole, and wrap securely. Steam the tamales: Place the tamales upright in a steamer and cook for 1 hour or until the dough easily separates from the husk. Ready to serve!
