Ingredients ⅔ cup dried shrimp 3 cups fresh kale (washed and chopped) 1 cup mole sauce ( doña María) 2 cups chicken stock 2 cups baby potatoes (halved) 1 ½ cups nopales (cooked) Azteca 1 tbsp salt Instructions Bring the chicken stock to a boil in a pot. Add the kale and cook for 5-7 minutes until tender. Drain and set aside, keeping the stock for the mole. Boil the nopales with water for 5 minutes, then drain. In a separate pot, boil the baby potatoes in salted water for 15 minutes or until soft. Drain and set aside. Soak the dried shrimp in hot water for 20 minutes, then peel and clean.
