Finally made the viral lasagna soup and it was AWESOME! Super easy to make and the family loved it. Perfect for this time of the year. Here’s everything I used: 2 tbsp olive oil 1 yellow diced onion 1 tsp Italian Seasoning 1 tsp All Purpose Rub 1 tsp dried Oregano ½ tsp red pepper flakes 1 tsp black pepper 3 cloves garlic 2 tbsp tomato paste ½ pound Italian sausage ½ pound ground beef 24oz marinera sauce 5-6 cups beef stock ½ pound lasagna pasta, broken up ¼ cup heavy cream Shredded mozzarella, parmesan, and fresh basil Be sure to check for salt as you go and add if needed. Grilled country style ribs. Not exactly sure why they’re called ribs since they’re cut from the shoulder, but either way, they are delicious. I like to sear them off first and then finish in a foil pan to get them super tender. My favorite way of cooking a lobster tail. Start by splitting the shell and laying the meat on the top. You can take it out fully, but this makes for a much nicer presentation. I seasoned it with my steak seasoning and cooked it on the @biggreenegg at 350 degrees, indirect, until it hit 135-140 internal. I also had some compound butter leftover from the tomahawk cook, so that got melted down and poured over the lobster tail at the end. Finish it off with some lemon juice and it’s ready to go. This might be my new favorite BLT. The beauty of the BLT is the simplicity. And by adding just a little extra flavor, it makes this classic sandwich so much better. When you cook your bacon, start with a cold skillet or griddle. This will help the fat render out and not burn the bacon. When it’s nice and crispy, season both sides with the new Maple Bourbon Rub. This will add the perfect amount of sweet to the bacon. Toast your bread and assemble the BLT. For the sauce, I did mayo, sriracha and my All Purpose Rub. And don’t forget to season the tomatoes! My favorite meat snacks are garlic steak bites. You can use any cut of beef. I found these tenderloin trimmings for a few bucks and they were perfect! Nice and tender and cheaper than buying a whole fillet. Cube them up, toss in some W sauce, season with my Steak seasoning and they hit the @Weber Grills griddle over high heat. Once you have a nice sear on the outside, drop the heat, add fresh garlic and butter, and cook until the butter is melted. Pull them off, top with some fresh parsley and enjoy! I love grilled pork chops! Here are my tips for perfect chops every time! 1. Start with thick pork chops. They are less likely to overcook and dry out on the grill. 2. Season on all sides and let them sit at room temperature for 15-20 minutes while you heat up the grill. The seasoning will stick better and will start to penetrate the meat. 3. Start over high direct heat, flip them every minute or 2 until you have your desired sear. Move them to the indirect heat side of the grill and continue cooking until they reach 140 degrees internal temp.
