My favorite way of cooking a lobster tail. Start by splitting the shell and laying the meat on the top. You can take it out fully, but this makes for a much nicer presentation. I seasoned it with my steak seasoning and cooked it on the @biggreenegg at 350 degrees, indirect, until it hit 135-140 internal. I also had some compound butter leftover from the tomahawk cook, so that got melted down and poured over the lobster tail at the end. Finish it off with some lemon juice and itās ready to go. Hard to pass up ribs when they are on sale lol . Buy 1 get 1 free at @marianosmarket , perfect for your Memorial Day BBQ. Try my party ribs recipe. Remove the membrane, cut them into individual bones and grill over DIRECT, low/medium heat for 30 minutes, flipping every few. Brush on your favorite bbq sauce at the end and let them rest for 30 minutes, covered with foil. These come out so good! This might be my new favorite BLT. The beauty of the BLT is the simplicity. And by adding just a little extra flavor, it makes this classic sandwich so much better. When you cook your bacon, start with a cold skillet or griddle. This will help the fat render out and not burn the bacon. When itās nice and crispy, season both sides with the new Maple Bourbon Rub. This will add the perfect amount of sweet to the bacon. Toast your bread and assemble the BLT. For the sauce, I did mayo, sriracha and my All Purpose Rub. And donāt forget to season the tomatoes!
