Creamy Fajita Chicken Pasta - 43g protein per serveeee baby ✨🤌🏻 Recipe slightly adapted from both @Scarlactive & @Aussie Fitness 🇦🇺💪🏼 (they are both GENIUSES for coming up with this!!!!) Recipe: 240g protein pasta (dry weight)- I use penne 1/2 tbsp olive oil 400g raw chicken breast (cut into cubes and seasoned with some salt & pepper) 2-3x medium capsicum (bell peppers) - sliced thinly 1 red onion - sliced thinly 1 packet fajita seasoning 8 x light laughing cow triangles or 130g light cream cheese or light cooking cream cheese 1. Cook the pasta according to packet instructions and reserve about 1/2 cup of pasta water 2. Heat the oil over medium-high heat and cook the chicken for 4-5 minutes or until no longer pink and move to 1 side of the pan 3. Add the thinly sliced veggies and cook for another 3-5 minutes or until the veggies are slightly soft. Add the packet of fajita seasoning and mix well 4. Turn to low heat and ,ake a hole in the centre and add your cream cheese/laughing cow wedges and pasta water. Mix until well incorportated and creamy. 5. Add the pasta and mix well until heated through and enjoy Makes 4 serves and is PERFECT for meal prep!! If you haven’t tried @Scarlactive’s creamy fajita pasta you need to ASAP 😮‍💨🤤😍 Ingredients: Pasta of choice 1tbsp olive oil 1tbsp minced garlic 1 brown onion 1 red onion 2 capsicums 2 chicken breasts Fajita seasoning 200g cream cheese Method: 1. Cook pasta as per directions 2. Slice up veggies and add to a pan with olive oil, minced garlic and 1/2 the packet of fajita seasoning. 3. Once veggies are cooked remove from the pan and cook chicken with the remaining seasoning. 4. Once chicken is cooked add back in the veggies, along with the cream cheese and mix.
