Stay Fit Mom Single Serve Dump Lasagna ~ per bowl: 481 cal / 38.8p / 46.3c / 15.8f Ingredients: 7 ounces pasta noodles of choice (uncooked) 1 pound lean ground beef (90/10) 1/2 small onion, diced (64g) 1/2 bell pepper, diced (100g) 1 zucchini, diced (100g) 2 celery stalks, diced (100g) 1 carrot, diced (100g) 1/2 tablespoon garlic paste or minced garlic 1 tablespoon parsley 1 tablespoon oregano 14.5 ounce can crushed tomatoes 8 ounce can tomato sauce 1 cup low fat cottage cheese (220g) 1 cup skim mozzarella cheese (84g) 1/4 cup parmesan cheese (28g) 1 large egg, whisked salt & pepper 1. Preheat the oven to 350 degrees and arrange oven safe containers on a cookie sheet. Spray lightly with cooking spray. 2. Cook your pasta according to package directions in salted water. Set aside. 3. Cook your beef over medium high heat until it is no longer pink. Turn off the heat and strain out the grease. 4. Return heat to medium high and add in the vegetables, garlic, and spices. Stay Fit Mom Red Curry Chicken Bakes makes 5 bowls 299 cals / 35.9p / 21.3c / 6.2f 25 ounces boneless skinless chicken breast 1 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon garlic powder 10 tablespoons basmati rice 10 tablespoons lite coconut milk 10 tablespoons chicken broth 1 tablespoon ginger paste 5 teaspoons Thai red curry paste 1/2 red bell pepper, diced (80g) 1/2 orange bell pepper, diced (80g) 1 medium zucchini, diced (150g) salt & pepper to taste 1. Preheat the oven to 350 degrees and arrange 5 oven safe containers on a cookie sheet. 2. Dice up the chicken and season with salt, pepper, and garlic powder. Set aside. 3. To each bowl add 2 tablespoons rice, 2 tablespoons coconut milk, 2 tablespoons chicken broth, 1/5 of the diced veggies, 1 small squirt ginger paste, 1 teaspoon of curry paste, and some salt and pepper. Stir well and top each bowl with 5 ounces of the seasoned chicken. 4. Bake for about 35-40 minutes, or until the rice is cooked. 5. Let cool before covering with lids and placing in the refrigerator. These s’more bars went out to my Monthly Macro Meals subscribers last July and were a huge hit! Sharing them with you all today! Stay Fit Mom Protein S’more Bars makes 16 servings serving size: 52g (1/16th) 174 cals / 6.1p / 18.6c / 8f 1/2 cup butter, room temperature 1/4 cup swerve brown sugar 1/2 cup swerve sugar 3 tablespoons egg whites 1 tsp vanilla extract 1 cup all purpose flour 3 scoops vanilla protein powder (99g) 4 graham cracker sheets 1 tsp baking powder 1/4 tsp salt 3 & 1/2 ounces Jet-Puffed Marshmallow creme 1 & 1/2 Hersheys milk chocolate bars (110g) 1. Preheat oven to 350 degrees. Spray 8x8 inch square baking pan with cooking spray. 2. In a large bowl, cream together with a hand-held electric mixer, butter and sugars until light and fluffy. Beat in egg whites and vanilla. 3. In a small bowl, whisk together flour, protein powder, graham cracker crumbs, baking powder and salt. Add to butter and sugar mixture and mix at low speed until combined. 4. Divide dough in half and press half into an even layer on the bottom of the prepared pan. 5. Spread marshmallow cream over the bottom layer as best you can. Break apart the Hershey's bar and evenly spread out the pieces. 6. Take the remaining dough layer it over the top. It's okay if there are uncovered sections of marshmallow and chocolate. 7. Bake for 25 minutes, or until lightly browned. Viral Tik Tok breakfast Casserole✨ For this recipe I just substituted the American breakfast biscuit for crumpets and it worked out so well 👌 it’s the perfect breakfast meal prep if you prefer a savoury breakfast! Ingredients Serves 6 -6 crumpets @tescoirl -10 Turkey sausages @ballyfree -400g egg white -1 medium egg -150ml almond milk -180g light cheese @charlevillecheeseire -salt, pepper, chives Method 1️⃣Cut crumpets into 4 pieces and put them alone the bottom of your casserole dish 2️⃣De skin your sausages and cook them on a non stick pan until slightly crispy. I’m a jug mix together egg white salt pepper egg and milk. 3️⃣Pour cooked sausage over your crumpets and then your egg mixture. Sprinkle cheese over the top and bake @ 180 degrees for 25mins and cover and cook for a further 15mins. Stay Fit Mom Protein S’more Bars makes 16 servings serving size: 52g (1/16th) 174 cals / 6.1p / 18.6c / 8f 1/2 cup butter, room temperature 1/4 cup swerve brown sugar 1/2 cup swerve sugar 3 tablespoons egg whites 1 tsp vanilla extract 1 cup all purpose flour 3 scoops vanilla protein powder (99g) 4 graham cracker sheets 1 tsp baking powder 1/4 tsp salt 3 & 1/2 ounces Jet-Puffed Marshmallow creme 1 & 1/2 Hersheys milk chocolate bars (110g) 1. Preheat oven to 350 degrees. Spray 8x8 inch square baking pan with cooking spray. 2. In a large bowl, cream together with a hand-held electric mixer, butter and sugars until light and fluffy. Beat in egg whites and vanilla. 3. In a small bowl, whisk together flour, protein powder, graham cracker crumbs, baking powder and salt. Add to butter and sugar mixture and mix at low speed until combined. 4. Divide dough in half and press half into an even layer on the bottom of the prepared pan. 5. Spread marshmallow cream over the bottom layer as best you can. Break apart the Hershey's bar and evenly spread out the pieces. 6. Take the remaining dough layer it over the top. It's okay if there are uncovered sections of marshmallow and chocolate. 7. Bake for 25 minutes, or until lightly browned. Viral Tik Tok breakfast Casserole✨ For this recipe I just substituted the American breakfast biscuit for crumpets and it worked out so well 👌 it’s the perfect breakfast meal prep if you prefer a savoury breakfast! Ingredients Serves 6 -6 crumpets @tescoirl -10 Turkey sausages @ballyfree -400g egg white -1 medium egg -150ml almond milk -180g light cheese @charlevillecheeseire -salt, pepper, chives Method 1️⃣Cut crumpets into 4 pieces and put them alone the bottom of your casserole dish 2️⃣De skin your sausages and cook them on a non stick pan until slightly crispy. I’m a jug mix together egg white salt pepper egg and milk. 3️⃣Pour cooked sausage over your crumpets and then your egg mixture. Sprinkle cheese over the top and bake @ 180 degrees for 25mins and cover and cook for a further 15mins.
