Recipe (serves 2) Ingredients: 🍗 4-5 Chicken thighs, skin on 🍗 Sesame oil 🍗 Salt 🍚 1 shallot, minced 🍚 4 cloves garlic, minced 🍚 1/2 tsp minced ginger 🍚 2 tsp butter 🍚 1 cup rice, washed 🍚 1 bunch spring onion 🍚 1 cup chicken stock 1. Season chicken thighs with salt & sesame oil and let marinate. 2. Set rice cooker to cook. Melt butter in rice cooker. When bubbling, sauté minced shallot, garlic & ginger. 3. Add in rice & mix to combine. 4. Place spring onion & chicken thighs on top of rice. 5. Pour in chicken stock. 6. Set rice cooker to ‘cook rice’ function. 7. Let it do its thang. 8. More tips here 👇🏻 When eating fast food or going out with friends, try keeping these additional tips in mind! ✅ plan ahead! If you track your food, try to plan what you’re having from that restaurant and log this meal FIRST, then work backwards to make your other meals fit into your calories/macros ✅ swap fried for grilled (ex: fried chicken for grilled chicken ✅ swap fries for salad or side of veggies (if you want the fries, have them, just be mindful of what the rest of your day and week look like as far as nutrition!) ✅ stick with water or low calorie drinks instead of more sugary, high calorie options ✅ eat slowly and actually enjoy the meal! ✅ look up the menu ahead of time to see what your options are instead of making a last minute, impulse decision!
