Replying to @Todo Harissa roasted carrots + chickpeas served with creamy yogurt, feta, and spicy chili oil - truly one of the best things I’ve tasted in awhile!! Could not stop eating these when I made them and once you try you’ll understand 🫶🏼 For the carrots: 6 large carrots, sliced in half lengthwise 2 tbsp olive oil 1 tbsp honey 1/4 tsp garlic powder 1/4 tsp smoked paprika Salt, to taste For the chickpeas: 1 jar/can of chickpeas 2 tbsp harissa sauce 1 tbsp olive oil Salt + pepper For serving: 1/2 cup plain greek yogurt 2-3 oz feta 1 tbsp fresh parsley, chopped 1-2 tbsp tahini Chili-infused olive oil 1. Preheat oven to 400 and line a large baking sheet with parchment paper. Add your carrots and toss with the olive oil, honey, garlic powder, smoked paprika, and a generous pinch of salt. Bake for 15 minutes. 2. Meanwhile, drain and rinse your chickpeas. Pat dry with a clean kitchen towel, then toss in a bowl with the harissa, olive oil, and salt and pepper. 3. After 15 minutes, flip all the carrots over and move to one side of the pan. Spread the chickpeas out on the other side. Bake for 20-25 minutes. 4. Allow carrots and chickpeas to cool for 5-10 minutes. Spread yogurt out on serving dish, then add carrots, chickpeas, and remaining toppings. Crispy Black Bean Tacos | Recipe ⬇️ Ingredients: * Black beans * Tortilla (corn or flour) * Onion * Garlic * Red bell pepper * Fresh chili or jalapeno * Seasoning (such as cumin, chili powder, or a Mexican spice blend) * Chipotle paste or paprika paste * Vegan cheese Instructions: 1. Crispy smashed potatoes Ingredients: * 1 - 1.2kg medium potatoes (6 - 8) * 1 tbsp salt * olive oil * Salt & black pepper, to taste * Finely chopped parsley (optional garnish) Instructions: * Boil potatoes in salted water: Small for 20-25 min, medium for 30 min, till soft. * Preheat oven to 200°C/390°F (180°C fan). * Drain and dry in colander for 5 min. * Smash on tray with fork/masher: Thin for crispness, thick for fluffiness. * Steam dry 5 more min on tray. * Drizzle with olive oil. Replying to @Todo Harissa roasted carrots + chickpeas served with creamy yogurt, feta, and spicy chili oil - truly one of the best things I’ve tasted in awhile!! Could not stop eating these when I made them and once you try you’ll understand 🫶🏼 For the carrots: 6 large carrots, sliced in half lengthwise 2 tbsp olive oil 1 tbsp honey 1/4 tsp garlic powder 1/4 tsp smoked paprika Salt, to taste For the chickpeas: 1 jar/can of chickpeas 2 tbsp harissa sauce 1 tbsp olive oil Salt + pepper For serving: 1/2 cup plain greek yogurt 2-3 oz feta 1 tbsp fresh parsley, chopped 1-2 tbsp tahini Chili-infused olive oil 1. Preheat oven to 400 and line a large baking sheet with parchment paper. Add your carrots and toss with the olive oil, honey, garlic powder, smoked paprika, and a generous pinch of salt. Bake for 15 minutes. 2. Meanwhile, drain and rinse your chickpeas. Pat dry with a clean kitchen towel, then toss in a bowl with the harissa, olive oil, and salt and pepper. 3. After 15 minutes, flip all the carrots over and move to one side of the pan. Spread the chickpeas out on the other side. Bake for 20-25 minutes. 4. Crispy Black Bean Tacos | Recipe ⬇️ Ingredients: * Black beans * Tortilla (corn or flour) * Onion * Garlic * Red bell pepper * Fresh chili or jalapeno * Seasoning (such as cumin, chili powder, or a Mexican spice blend) * Chipotle paste or paprika paste * Vegan cheese Instructions: 1. Crispy smashed potatoes Ingredients: * 1 - 1.2kg medium potatoes (6 - 8) * 1 tbsp salt * olive oil * Salt & black pepper, to taste * Finely chopped parsley (optional garnish) Instructions: * Boil potatoes in salted water: Small for 20-25 min, medium for 30 min, till soft. * Preheat oven to 200°C/390°F (180°C fan). * Drain and dry in colander for 5 min. * Smash on tray with fork/masher: Thin for crispness, thick for fluffiness. * Steam dry 5 more min on tray. * Drizzle with olive oil. Spaghetti all'Assassina Ingredients: * 300g spaghetti * 1-2 red hot chilli peppers * 2 cloves of garlic * 150g tomato concentrate * ½ bottle of tomato passata * Salt and pepper to taste * Extra virgin olive oil Instructions: 1. Boil a large pot of water. 2. Cook the tomato concentrate in the pot for around 10 minutes, then set aside. 3. Slice the chilli peppers and finely chop the garlic. 4. Heat olive oil in a pan and add the garlic and chilli peppers. Cook for 20 seconds. 5. Stir in the tomato passata and cook for 2-3 minutes until the sauce thickens. 6. Add the spaghetti to the pan and cook for 4 minutes, flipping it to cook the other side. 7. Slowly add the tomato concentrate sauce. 8. Season with salt and pepper, and continue cooking as the pasta absorbs the sauce. 9. Let the spaghetti cook for 1-2 minutes for crispiness. 10. Stir the pasta and spread it out in the pan to toast. 11. Drizzle olive oil over the pasta and remove from the pan. 12. Recipe - 1/2 lb pasta noodles - 3 cups cauliflower florets - 2 big handfuls of spinach - 2 cups shredded cheddar cheese - 2/3 cup milk - 1 tsp salt - 1/2 tsp garlic powder - 1 tbsp nutritional yeast 1. Bring a large pot of salted water to a boil. Cook the cauliflower until tender, then drain and transfer to a blender. 2. In the same pot, cook the pasta noodles according to package instructions until al dente. 3.
