Taste 9/10 Visuals 8/10 Hello there, below is the chocolate praline mouse recipe I used to make this dessert. The mousse fitted nicely into a 20x26cm baking tin. Praline Base - 200g praline (check online for an easy recipe) - 110g milk chocolate melted - 110g finely ground cornflakes Process 1. Combine all ingredients to form a paste. 2. Line a 20x26cm baking tin with rectangular parchment paper. 3. Spread the paste evenly in the tin. Place in the freezer while preparing the rest of the recipe. Chocy Mousse - 140g heavy cream - 140g milk - 3 egg yolks - 2 gelatin sheets - 400g milk chocolate - 400g heavy cream whipped Process 1. Heat 140g heavy cream and 140g milk until simmering. Set aside. 2. Whisk egg yolks, then add hot cream mixture while whisking. 3. Cook the mixture over low heat until thickened, creating a creme anglaise. Remove from heat. 4. Soften gelatin sheets in water, add to the warm creme anglaise and stir until dissolved. 5. Melt 400g milk chocolate and combine with the creme anglaise. Let it cool to room temperature. 6. Fold in 400g whipped cream. 7. Transfer the mixture to a prepared baking tin with praline and freeze for at least 4 hours or until set. 8. run a sharp knife along the edges to remove the mousse from the tin once frozen. Thaw slightly and cut into neat bars (approximately 8-12). Return to the freezer. Glaze Options: - Red velvet cocoa spray - Chocolate glaze Sample Glaze - 200g water - 170g sugar - 230g glucose - 130g condensed milk - 17g gelatine sheets - 100g dark chocolate

It adds a nice texture and flavour to the cake. The sponge cake was doused in a coffee and nut liquor mixture. Taste 8.5/10 Visuals 7.5/10 The visuals could have been better. The room was a bit too hot, which made it tricky for the red velvet cocoa butter to stop melting. The roses were lovely, but some could have been better executed. The mirror glaze could have also been a touch more red. Overall, classy and beautiful. Recipe? I will post the full recipe on my site. Unfortunately, I don't have enough space to describe everything fully. Day 63 of culinary school! 👩🏽🍳 - it’s been a little while since I posted one of these blogs but I just realized my Easter holiday is almost finished and I still haven’t finished posting all of last terms Vlogs! So, here is day 63 where we made a Paris-Brest and it was actually so fun! If you go back to my last vlog a few post down, you’ll see all of the preparation we did for this since it is a pretty advanced form of patisserie. it’s basically choux pastry in a big ring and then inside it’s filled with hazelnut creme mousseline, hazelnut praline and icing sugar. It was pretty fulfilling seeing our progress from making profit to now making something like a Paris-brest! Mochi Week Episode 5: Praline Mochi I'm using the mochi we made in episode 1! Ingredients for the mochi are down below, but if you need the steps, go check out episode 1! INGREDIENTS: MOCHI- 100g Glutinous Rice Flour 60g White Sugar 160ml Water Cornstarch for dusting Filling- 100g of nuts (I’m using pistachio and walnut) 70g granulated sugar (If ur blender is bigger, you may need to double the recipe to get it to a paste like consistency) Steps: 1. Roast the nuts in the oven for 6-8min at 180*c. It should be noticeably more fragrant. Let it cool completely before moving on 2. In a saucepan add the sugar and let it dissolve at medium heat. Try to not stir or agitate it until most of the sugar has dissolved. Stir with a spatula when needed to get it evenly golden. 3. Once the caramel is golden brown add in the cooled nuts. Quickly stir everything together as best as you can 4. Pour it onto a baking sheet to cool completely 5. With half or 2/3 of the praline, add it to a blender and blend until u get a paste or praline butter 6. The other half needs to be crushed into smaller chunks 7. To assemble, take the scoop of the paste. Add the chunks to the middle and roll it into a ball 8. Add the ball to a piece of mochi and wrap it up by pinching the edges together 9. Lelehkan kedua jenis cokelat, tambahkan icing sugar, cocoa powder, dan garam, aduk rata. 2. Tambahkan coconut oil yang sudah dihangatkan, aduk rata. 3. Masukkan juice dan selai orange, aduk hingga rata, sisihkan. Bahan Finishing : 100 g selai orange marmalade 700 g Colatta Compound White Colatta Chocoart Egg Yellow Colatta Chocoart Red Cherry Colatta Chocoart Lime Green Cetakan praline Penyelesaian : 1. Bersihkan cetakan dengan kapas atau tisu. 2. Tuang @30 g cokelat white yang sudah dilelehkan ke wadah, kemudian masing-masing beri pewarna, aduk rata. 3. Buat motif titik secara acak pada cetakan praline dengan warna putih, hijau dan merah, biarkan cokelat mengeras. 4. Tuang cokelat warna kuning tua hingga penuh, diamkan ±16 detik, tuang kembali, usahakan kulit praline jangan terlalu tebal, biarkan cokelat dalam cetakan mengeras. 5. Masukkan orange marmalade secukupnya kemudian masukan chocolate orange filling di atasnya, tutup dengan cokelat warna kuning, simpan dalam lemari es selama 5 menit.
