This natural, healthy soup will help you anytime you’re feeling sick. You’ve got to try it 🧡 Servings: 4 Ingredients: 8 cups chicken broth 4 large carrots 2 ribs celery 4 cloves garlic 1 yellow onion 1 cup dry star-shaped pasta Seasonings: 1 tsp salt, 1/2 tsp pepper, and 1/2 tsp Italian seasoning Recipe: 1. Heat a pot on medium/high heat with 8 cups chicken broth. 2. Peel and chop your carrots into halves, removing the stem. Chop your celery into halves. Remove garlic from the bulb and take out 4 cloves. Chop your onion into 2 halves, removing the outer layer. 3. Add in all of your vegetables to the broth, along with your seasonings, and let cook on medium/high heat for 45 mins - 1 hour, or until vegetables are soft. 4. Use an immersion blender, or remove the vegetables and some of the broth to a blender and blend until creamy. Add the broth back into the pot. Be careful - this broth is really HOT! 5. Boil a small pot of water on the stove. Once boiling, add in pasta. Let cook for 7 mins (or based on what the packaging says). Strain the pasta and then add back into the small pot you cooked it in. 6. In a bowl, add your cooked pasta noodles and then top with the cooked veggie broth. Optional topping: EVOO. Everytime I cook for others, everyone requests this soup 💛 Servings: 4 Ingredients: 3 tablespoons olive oil 1 cup dry orzo pasta 6 cups chicken broth/stock 1 full rotisserie chicken breast, shredded and chopped 1/2 cup shredded carrots 1/2 cup chopped celery 1/2 yellow onion, diced 3 garlic cloves, minced 1/4 cup chopped fresh cilantro 2 lemons, juiced 1 small lemon, chopped into wheels for topping Seasonings: 1/2 tsp dried oregano, 1/2 tsp lemon pepper, 1 tsp salt, 1/2 tsp pepper, 1/4 tsp paprika Optional toppings: Parmesan & EVOO drizzle Recipe: 1. Heat a pot on medium heat with olive oil 2. Add chopped onion and minced garlic onto the pan. Let cook for about 3 mins 3. Add chopped carrots and celery onto the pan and let cook for about 5 mins 4. Add your seasonings and mix around 5. Pan toast the orzo for 4 mins, stirring around to make sure the orzo gets flavoring in it 6. Pour in chicken broth and turn pot to a boil (medium/high heat) 7. Once pasta is done cooking (10 mins), turn the heat down to a simmer. Add in your chopped rotisserie chicken breast, juice of 2 lemons, and chopped cilantro.
