This one-pot pasta has so much going for it. It's delicious, made from just a handful of ingredients, packed with protein and fiber, and requires minimal clean up. Here'es what you'll need: - 1 box of Chickapea Shells - 1 1/2 cups of broccoli florets, chopped - 1/2 a red onion, thinly sliced - 1 cup of grape tomatoes, halved - 2 cloves minced garlic - 1 tbsp nutritional yeast - 1 1/4 cups of marinara sauce - 2 1/2 cups of water - salt, pepper and chili flakes to taste 1. Add everything into a pan and bring to a boil. Once boiling, reduce the heat to medium and let cook for about 10 minutes. Spaghetti carbonara is a classic pasta dish that is surprisingly easy to make. All youāll need is: - 1 box of Chickapea spaghetti - 4 pieces of bacon - 1/2 cup of pecorino romano, grated (can sub for parmesan) - 3 egg yolks and 1 full egg - Black pepper to taste - 3/4 cup of pasta water (approximately) 1. Start by slicing your bacon into small pieces and cooking in a pan over medium heat until itās nice and crispy. 2. Cook your spaghetti according to the instructions on the box. 3. While thatās cooking, whisk together the eggs, parmesan and lots of freshly cracked black pepper. 4. Before draining your pasta, save about 3/4 cups of pasta water. 5. Very gradually start adding the pasta water into the egg mixture. Itās important to do this very slowly and make sure that you are continually whisking to make sure that the eggs donāt scramble. Keep adding water in and mixing until youāve used about 3/4 of a cup. 6. Next, turn the pan with the bacon off the heat and add in the pasta and the egg mixture. Immediately start tossing it around with tongs to avoid scrambling the eggs again. Do this for a few minutes to form the sauce and combine everything. Add in a little bit more pasta water if needed. 7. Serve the pasta with some more pecorino romano and cracked black pepper. Soup season has officially arrived and we are kicking it off with this delicious minestrone soup. Here's what you'll need: - 2 tbsp olive oil - 1 white onion, diced - 2 carrots, diced - 2 stalks of celery, diced - 1 cup of zuchinni, diced - 1 cup of green beans, cut into thirds - 3 cloves of garlic, minced - 1 large jar of diced tomatoes - 4 cups of veggie stock - 2 cups of water - 1 tsp oregano - 1 tsp thyme - 2 bay leaves - 1 box of Chickapea Pasta Elbows or shape of choice - the juice of 1/2 a lemon - salt + pepper to taste 1. Start by heating up olive oil in a large pot and then sautƩ the onion, carrots, celery, and zucchini for 5-7 minutes over medium-high heat. Season with salt and pepper throughout the cooking proccess. 2. Add in the garlic and green beans and sautƩ for a few more minutes. 3. Next, add in the can of diced tomatoes, veggie stock, spices, and 2 cups of water. 4. Once the soup is boiling, add in your box of Chickapea Pasta and simmer for 5-7 minutes or until the pasta is cooked through. 5. Once the pasta is cooked, remove the bay leaves and add in a squeeze of lemon and more salt + pepper if needed. Enjoy!
