Spaghetti carbonara is a classic pasta dish that is surprisingly easy to make. All you’ll need is: - 1 box of Chickapea spaghetti - 4 pieces of bacon - 1/2 cup of pecorino romano, grated (can sub for parmesan) - 3 egg yolks and 1 full egg - Black pepper to taste - 3/4 cup of pasta water (approximately) 1. Start by slicing your bacon into small pieces and cooking in a pan over medium heat until it’s nice and crispy. 2. Cook your spaghetti according to the instructions on the box. 3. While that’s cooking, whisk together the eggs, parmesan and lots of freshly cracked black pepper. 4. Before draining your pasta, save about 3/4 cups of pasta water. 5. Very gradually start adding the pasta water into the egg mixture. It’s important to do this very slowly and make sure that you are continually whisking to make sure that the eggs don’t scramble. Keep adding water in and mixing until you’ve used about 3/4 of a cup. 6. Next, turn the pan with the bacon off the heat and add in the pasta and the egg mixture. Immediately start tossing it around with tongs to avoid scrambling the eggs again. Do this for a few minutes to form the sauce and combine everything. Add in a little bit more pasta water if needed. 7. Serve the pasta with some more pecorino romano and cracked black pepper.
