Miso mushroom pasta🍝 This is something I chucked together but ended up tasting AMAZING, if i do say so myself xoxox Serves 1 You’ll need Butter 2 cloves of garlic 1 tbsp Chilli flakes 1 tbsp Oregano Soy sauce (a splash) 1 tbsp of White Miso paste Half a bag of baby spinach Half a tub of your favourite mushrooms, any would work but I used white button mushrooms 1 spring onion As much pasta as you want (I used brown pasta) Salt and pepper 1. Wash the mushrooms, chop, then wash again. 2. Chuck the mushrooms into a dry pan with nothing else in there (trust me). Mushrooms absorb sooooo much flavour but if you put oil in right at the beginning, you’ll have to keep adding more and before you know it, you’ve used half a bottle of oil 😭 3. Leave them for 5 mins on a medium high heat and you’ll start to see liquid come out. Leave them for a couple more minutes, don’t stir loads. Once the liquid has evaporated, the mushrooms will start to golden. It’s a trust the process kinda moment. 4. Meanwhile, get the pasta cooking and prep the spinach and spring onions by roughly chopping. 5. Once the shrooms are looking golden, add a little bit of pasta water and the spinach and simmer for a minute or until the spinach has wilted. 6. Push your shroom and spinach mix to the side. Add a knob of butter and chuck in the minced garlic and spring onions in the same pan. Simmer for a minute and mix with the spinach and mushrooms. 7. Now add the miso, a big glug of soy sauce, another splash of pasta water, chilli flakes, oregano, salt and pepper. 8. Mix in the pasta and ENJOY ❤️ #mushroom #mushroompasta #miso #misomushroompasta

This sticky tofu is perfect for any tofu skeptics out there. I hear soooo many misconceptions about tofu. People say it’s boring, bland and difficult to cook. But this couldn’t be further from the truth - tofu is so versatile and there’s nothing difficult about this recipe. Give this tofu a try and see if you’re still a skeptic. You’ll need One block of firm tofu Sesame seeds 2 tbsp dark soy sauce 1 tbsp Gochujang 1 tsp White miso A big squirt of Sriracha 1 tbsp Honey 2 Garlic cloves Vegetable oil Recipe 1. Pat the tofu dry with kitchen paper and cut into bite-sized chunks. 2. Put cornflour or plain flour into a container with a bit of salt and pepper mixed in and shake until the tofu is coated. 3. Fry on a medium heat in oil whilst you make the sauce. 4. The sauce is simple - mix all of the sauce ingredients together with a little bit of hot water to loosen the sauce. 5. This basily, fresh, tomato sauce is my favourite way to cook cod 🍅 mmmmm SO good, if you love fish - you need to try this! Recipe Tomato sauce - 10/15 Plum tomatoes Half a veggie stock cube Paprika Smoked paprika Balsamic vinegar Fresh basil Oregano Extra virgin olive oil 3 garlic cloves Sugar Chilli flakes Mixed herbs Salt Black pepper (Some red wine would have been unreal in this sauce but I didn’t have any in) You’ll also need Cod Lemon Butter Recipe 1. Get the tomato sauce on the go by lightly frying a few minced garlic cloves on a low heat. At the same time chuck in about 10/15 plum tomatoes, whole. 2. Leave this to simmer on a low heat for a minute or two, then add about 250ml of vegetable stock over the garlic and tomatoes. Turn the heat to medium so it’s simmering, then cover. 3. Prepare the cod by placing on foil, seasoning well with salt, black pepper, and smoked paprika. Add butter and lemon juice and zest, wrap in foil and cook in the oven. Cook for 16 mins on 180 fan but it could differ depending on the size of the cod so always check cooking instructions. 4. Go back to the sauce. Add a glug of balsamic vinegar, 1tsp paprika, 1tsp smoked paprika, half a tsp oregano, 1tsp mixed herbs, chilli flakes (whatever you fancy), 1tbsp sugar, and tear up a good amount of fresh basil and mix it into the sauce. Season generously with salt and pepper. Place the lid back on and leave the sauce to simmer whilst the cod cooks. 5. When the cod is done, plate it up and add a little bit of the juice in the foil to the sauce, a bit of butter, and more fresh basil. Top the cod with the sauce and add whatever sides you fancy. 6.
