Episode 26 of 30 of the Ramadan series: Coconut lime salmon 🥥🍣 Recipe below 👇🏽 Ingredients: 2-4 salmon fillets Salt Black pepper 2 tbs olive oil 3 garlic cloves, minced 2 tsp ginger, minced 1 tbs light brown sugar 1-2 tbs chilli paste 400g/14 ounce can coconut milk 1 tbs fish sauce/salt/soy sauce Zest of 1 lime 1 tbs lime juice Rice/vermicelli noodles to serve Cilantro, red chillies, lime slices to garnish Steps: 1. Lightly season the salmon with salt and pepper on both sides. 2. Heat the oil in a pan over med-high heat then sear the salmon for about 1 minute on each side. You want it to still be raw inside. 3. Set the salmon aside. 4. In the same pan on medium heat add the garlic and ginger and cook for 2 minutes. 5. Add the brown sugar and cook for 20-30 seconds or until caramelised (see video). 6. Add chilli paste and cook for 1 minute. 7. Add coconut milk and stir to dissolve the sugar. 8. Add fish sauce, salt or soy sauce then return the salmon to the sauce and cook on low heat for 5 minutes or until the salmon is cooked through. 9. Remove the salmon and add lime zest and juice. Continue to cook until thickened, about 5 minutes. 10. Taste for seasoning and adjust lime juice and salt/fish sauce/soy sauce to taste. 11.
