Ingredients: - 1 1/2 lb Pork shoulder, loin (cubed to 1 in.) - 1 1/2 TB Lola’s Spices Southwest Blend - 8 Tomatillos - 2 Jalapenos - 4 small Sweet Peppers - 6 Cloves Garlic - 4 Green Onions - 1/4 cup Flour (AP) - 1 Yellow Onion (quartered) - 1 Red Onion (chopped) - 1/4 Cup Cilantro (chopped, reserve 1 tsp for garnish) - 1 TB Olive Oil (extra virgin) - 1 tsp Vegetable Bouillon - 2 cups Water - 2 limes (quartered) - 1/2 tsp Salt to Taste Instructions: 1. Preheat oven to 350°F. On a sheet pan, add Olive Oil, Tomatillos, Jalapenos, Green Onions, Garlic, Sweet Peppers, and salt. Roast for 30 mins, turning halfway until cooked and peppers are soft. Peel and remove skins from peppers after cooling. 2. In a blender, combine all roasted vegetables and cilantro. Blend until smooth. 3. Toss pork in flour to coat. Set Instapot to Saute, add Olive Oil, and brown pork on all sides. Add Red Onion and cook until soft (about 3 to 5 mins). 4. Adjust Instapot setting to meat/chili, add water and vegetable Bouillon. Stir and cook for 30 mins. Allow to self-vent. 5. Serve with rice, cilantro, and a squeeze of lime.
