RAINY DAY COOKING VLOG: I will use any excuse to make soup even if it only drizzles for 20 minutes here in So Cal!! 🍜 (P.S. I know it didn’t rain today this was prefilmed 🫡) The key to my manchow soup is to cook in layers. What I mean by that is you want the vegetables to retain texture to add layers to the soup. It’s hard to tell in the edit but I cook each round of veggies for 2-3 before adding the next batch and the cabbage at the very end for the last boil. Also shoutout to @betterthanbouillon soup bases they are truly the best!!! This recipe is meant for you to experiment with and also put your own twist on it if you’d like. not me reminding y’all about your New Year’s resolutions 😳 Make sure to SAVE/SHARE this video for the next time you need to cook rice !! 🍚🫶🏽 Here are some key takeaways from this video: - Measurements: Any type of measuring utensil works when make rice, even any random bowl you have in your cabinet. This works because of the 2:1 liquid to rice ratio. Next thing to keep in mind is, the more rice you cook the bigger pot you will need. If you are making 1-2 cups of rice, I recommend using a large pot so that it has enough room to expand while cooking. If it’s overcrowded it will not cook properly. - Liquids & Fat/Seasoning: As mentioned above, a 2:1 liquid to rice ratio is always the way to go. That being said, the liquid you use can vary! I usually like using chicken/vegetable broth for some extra flavor in place of water. If you want plain rice, be sure to add a pinch of salt like I did for a bit of flavor. For fats, as mentioned it is not mandatory but I find that toasting it almost gives the rice a nice subtle flavor. 1. Add 1/3 cup of long grain basmati rice to your pot. 2. Rinse 2-3 times until the water is clear. 3. Optional: Add 1/4 teaspoon of unsalted butter and constantly stir rice at a medium heat for 1-2 minutes. 4. Add in 1/4 teaspoon of pink himalayan salt and mix everything together 5. Add in 2/3 cup of water and turn the heat to high and bring the water to a boil and let it cook for 1-2 minutes. 6. Cover with a lid and turn the heat to low and let it cook for 15-20 minutes. Make sure during this time you DO NOT open the lid or stir the rice let it cook with the lid on as is. 7. Optional: After that time is up you can let it sit for 5 minutes off the heat to ensure it is cooked through. The residual heat will cook it even with it being on heat. I don’t do this step often if I am being honest but I know it is sometimes hard to tell if you forgot to set a timer or just aren’t sure. 8. Fluff with a fork and enjoy! chickpea sandwhich!!!! 🗣️🥪😉 My parents being vegetarian honestly really helps me explore so many fun vegetarian recipes like this one! A quick replacement for the ponzu could be to just use equal parts lemon juice and soy sauce for the same flavor. To make this vegan you can simply replace the kewpie mayo with vegan mayo. This recipe is light, refreshing and leaves you wanting to eat the chickpea mixture by the spoonful.
