Peanut Chicken Meal Prep Ingredients: - 1 head broccoli - 2 bell peppers - 1/2 yellow onion, diced - 2 tsp ginger paste - 2 tbsp soy sauce - 2 large chicken breasts cut into small pieces Peanut Sauce: - 1/2 cup peanut butter - 1/4 cup water - 1 tbsp sesame oil - 1 tbsp lime juice - 1 tsp mined garlic - 1 tbsp soy sauce or coconut aminos - 2 tsp honey - 1 tsp red pepper flakes Rice Mixture: - 1 cup Jasmine rice - 2 cups water - 1 cup frozen cooked riced cauliflower 1. Chop up onion, peppers, and broccoli 2. Add veggies to a pan with olive oil and ginger paste 3. Top with soy sauce and cover to cook 4. In a small pot add 1 cup uncooked rice jasmine rice to 2 cups water and cover over low heat for 8 minutes until fully cooked. 5. Stir in 1 cup frozen riced cauliflower and add a little salt. Set aside. 6. When broccoli is bright green, add cut up chicken and stir. Cover while you make the sauce. 7. Combine ingredients for sauce listed above and pour over veggies and chicken when chicken is fully cooked. 8. Mix peanut sauce and veggies until coated. 9. Divide rice and chicken and veggie mixture into four meal prep containers 10. Top with sesame seeds. 11. Store in fridge for next three-four days or freeze. 12. I like to heat mine up for 1 minutes when ready to eat.

#Stacys_Partner these are soo easy and full of flavor. @Stacy’s Pita Chips Lean Ground beef seasoned with: - Garlic powder - Onion powder - Lemon pepper - Oregano - Dill - Salt + Pepper - Cucumber - Cherry Tomatoes - Kalamata Olives - Feta - Tzatziki - Red Onion - Fresh Parsley 1. Season ground beef with seasonings and add to a pan with olive oil 2. Break beef up as it cooks over medium heat until fully cooked 3. While beef is cooking chop up your veggies 4. Layer a bowl with stacys pita chips 5. Top with ground beef, cucumber, tomatoes, red onion, feta, olives, parsley and top with tzatziki

Thai Peanut Noodles - 1/4 cup Soy Sauce or coconut aminos - 3 tbsp Sweet Chili Sauce - 1 Tbsp Sesame Oil - 3 Tbsp Peanut Butter - 2 Tbsp Rice Vinegar - 1-2 tsp sriracha - 1 clove Garlic minced - 1 Lime juiced (You could also use Trader Joe’s Thai peanut sauce if you do not want to make your own) - 1 container stir fry veggies (I like the fresh premixed on from Trader Joe’s but you can use a frozen one too) - 1 package 8oz pad Thai rice noodles 1. Whisk all the ingredients above together in a container 2. Boil water and cook noodles 3. Add veggies to medium pot with avocado oil and sauté until cooked 4. Strain water from noodles and combine with veggies 5. Pour sauce over and mix until well combined 6. Serve with cooked chicken or a fried egg

CAVA AT HOME MEAL PREP Corn Salad: (mix together the following) -1 can roasted corn, drained -1 cup cherry tomatoes, cut in half -1 cup English cucumber, cut into fourths -Salt, pepper, & garlic powder -2-3 tbsp avocado oil Brown rice: -Cook 1 cup of brown rice according to package, it will make 2 cups and add 1/2 cup to each meal prep container 5 boneless skinless chicken thighs: - season with: - 1/2 tbsp Cumin - 1/2 tbsp Garlic - 1/2 tbsp Lemon pepper - 1/2 tsp Cayenne - 1/2 tbsp Paprika - 1/4 tsp cinnamon - 1/2 tbsp Chili powder - 1/4 tsp Salt - Bake in oven 425 for 25 minutes! Hummus: Blend tougher the following in a food processor: - 1 can chickpeas, drained and rinsed - 1 cloves garlic - 2 tbsp olive oil - 1 small ice cube (sounds weird I know) - Juice from 1 lemon - 1/3 cup tahini - 1/2 tsp cumin - 1/2 tsp sea salt Assemble four meal prep containers with chicken, brown rice, and corn salad. Serve with homemade hummus! I microwave this for 40 seconds to heat it up a bit but not make the cucumbers and tomatoes too warm. You could also eat this cold!
