Peanut Chicken Meal Prep Ingredients: - 1 head broccoli - 2 bell peppers - 1/2 yellow onion, diced - 2 tsp ginger paste - 2 tbsp soy sauce - 2 large chicken breasts cut into small pieces Peanut Sauce: - 1/2 cup peanut butter - 1/4 cup water - 1 tbsp sesame oil - 1 tbsp lime juice - 1 tsp mined garlic - 1 tbsp soy sauce or coconut aminos - 2 tsp honey - 1 tsp red pepper flakes Rice Mixture: - 1 cup Jasmine rice - 2 cups water - 1 cup frozen cooked riced cauliflower 1. Chop up onion, peppers, and broccoli 2. Add veggies to a pan with olive oil and ginger paste 3. Top with soy sauce and cover to cook 4. In a small pot add 1 cup uncooked rice jasmine rice to 2 cups water and cover over low heat for 8 minutes until fully cooked. 5. Stir in 1 cup frozen riced cauliflower and add a little salt. Set aside. 6. When broccoli is bright green, add cut up chicken and stir. Cover while you make the sauce. 7. Combine ingredients for sauce listed above and pour over veggies and chicken when chicken is fully cooked. 8. Mix peanut sauce and veggies until coated. 9. Divide rice and chicken and veggie mixture into four meal prep containers 10. Top with sesame seeds. 11. Store in fridge for next three-four days or freeze. 12.
