CARROT COTTONTAIL — • ¾ oz Demerara syrup • ¾ oz acid adjusted pineapple juice (50g pineapple juice/5g citric acid/2.5 g malic acid) • 1 oz carrot juice • 1 oz campari • 1 oz mezcal • 1 oz tequila blanco • 1 egg white • garnish: mini carrots Add all ingredients to a cocktail shaker and shake without ice. Add a large ice cube and shake again. Strain into a rocks glass over a fresh ice cube. Well, what can I say, it started out very simply and ended up getting a bit complicated. But here’s something that I experimented with, tweaked a bit here and there, and now we have what I call the ✨Heatwave✨ and let me say it’s pretty neat! Here’s your reminder to EXPERIMENT AND PLAY!!! HEATWAVE — • 2 oz fat washed tequila • 1 oz acid adjusted blood orange juice • ¾ oz simple syrup • 1 oz cointreau • ~heaping spoonful sour cream • garnish: dried chili Add all ingredients to the jar of sour cream and give it a mix. Let it sit in the refrigerator for 5 hours. Strain through a coffee filter lined sieve. Pour over ice. Garnish with a dried chili. CHILI EVOO TEQUILA — • 15g chili evoo • 300g tequila blanco Add to a jar, give it a shake, and let it freeze overnight. The next day, strain through a coffee filter lined sieve. PICKLED TOMATO MARTINI — • 2 pickled teeny tiny tomatoes (or some other small tomato variety) • ¾ oz pickled tomato brine • ¾ oz Vermouth by Evie (or a good dry vermouth) • 2½ oz dry gin • garnish: pickled tomato Add 2 pickled tomatoes to a mixing glass with the pickled brine and muddle. Add the vermouth and dry gin along with a good amount of ice and stir until chilled. Double strain into a chilled stemmed glass and garnish with a single pickled tomato.
