Here’s a simple & comforting dish for you, Pomodoro 🍝 Ingredients: 2 tbsp olive oil Roughly 12 grape tomatoes, halved 2 whole garlic cloves, lightly mashed Around 4 basil leaves, torn 1/4 shallot, thinly sliced Spaghetti or whichever pasta you have on hand Salt & pepper to taste Parmesan METHOD: - On medium-low heat, drizzle an olive oil to your pan - Add your garlic and shallots and lightly sweat them in the oil to infuse all the flavors. - Once your veg is softened, add your fresh tomatoes. - once tomatoes are very blistered and jammy, tear in half of your basil. raise the heat up to medium - Begin to cook your pasta - After about 15 minutes your tomato’s should have released their juices, everything should look jammy and caramelized - Remove your whole garlic cloves and cooked basil, these have done their jobs - Add your pasta and slowly incorporate some of your pasta water in order to give your sauce some body - Raise your heat to medium high and toss your pasta - Drizzle a touch of olive oil and tear in more fresh basil to finish it off - Remove from the heat, plate, top it off with some Parmesan and enjoy. Monday- it’s just another day. Make some toast. Ingredients Handful of shiitake mushrooms, sliced 2 anchovy fillets 1/2 shallot, finely diced 1 garlic clove, minced Fresno chili sliced (amount depends on your spice level) 2 eggs, scrambled Olive oil small pinch of salt and pepper to taste (remember that anchovies are already salty) Soy sauce is also a good idea here 1/2 avocado sliced Pinch of cilantro for garnish squeeze of lime chili oil drizzle @flybyjing Sourdough toast, lightly buttered and pan fried Method: Begin by tossing’ your shroomies into some olive oil on medium high heat. Sauté them around until they get some color and some crunchy bits then lower the heat to medium and add just a touch more olive oil. Melt in some Anchovies throw in your shallots and garlic. Sauté until softened then scramble in your eggs. If you’re feeling spicy, add some Fresno chili, jalapeño or Serrano. While you slice your avocado, toast up some lightly buttered bread. Top that bread off with your avocado, Eggs a quick little squirt of lime, cilantro and your favorite chili oil. I used Fly By Jing’s ‘Zhong Sauce’ @flybyjing - Enjoy
