Eid Recipes - Baklava Custard Tart You need: 14 sheets filo sheets 200g butter Filling: 5 cups milk 1/2 cornstarch/flour 1/2 cup sugar 3 tbsp orange blossom water Sugar syrup: 300ml water 500g sugar 4-5 slightly cracked cardamom pods 3tbsp orange blossom Juice of half a lemon Crushed pistachios for topping 1. In a pan on medium heat add the milk, cornflour, sugar and orange blossom water. Mix and leave to thicken. It’ll take a few minutes but be patient. Remove from heat once done. 2. Melt your butter. 3. In an oven proof dish, add some butters enough to cover the base and the sides. Lay a sheet of filo on top pressing down to make sure it sticks to the butter. Repeat this for 6-7 laters. 4. Now we add our filling. Gently pour in the custard filling. Then fold over the sides. Depending on your dish you may need to trim off some edges. 5. Add some butter and lay down another sheet of filo. Repeat for another 5-6 layers. Maybe sure you spread butter on the last layer. 6. Cut into how many slices you desire. 7. Place in a preheated oven at 190c for 20mins or until golden brown. 8. Meanwhile make your sugar syrup but adding all the syrup ingredients into a pan on medium heat and leave to simmer until the sugar dissolves. Make sure to remove the cardamom when serving. 9. Pour over the syrup whilst it is still hot. I like to pour half whilst it’s hot and the the rest layer on any leftovers. 10. Add any toppings you like straight after the syrup. Ramadan/Eid Recipes - BBQ Ribs You need: Beef ribs BBQ sauce 1. Bowl your meat for 30-60mins. 2. Drain the water. 3. Make sure the meat is in an oven proof dish at this point. Add your bbq sauce. I love Korean ones as they are a lot more stickier. Add veg if you like. Then fill the bbq sauce bottle with water and pour in. 4. Cover and place in an oven @210 for 60mins. Ramadan Recipes - Chicken & Cheese Puffs You need: 1 roll Puff pastry 2 chicken breast, diced very small 1 red onion, finely diced 2 tbsp cream cheese 2-3 tbsp cream (I used double but single works too) Handful fresh parsley, chopped (sub for coriander) Tbsp butter Tsp garlic purée (I used salted version) 1 cup grated cheddar cheese Seasoning: cumin, paprika, chicken seasoning, sumac, salt, pepper Cheese sauce: 3-4 slices American cheese, 2 tbsp milk. Egg yolk for egg wash 1. In a frying pan on medium heat add your butter and let it melt. Add your chicken and leave to cook for a minute then add your diced onion. 2. Continue to cook until the onion is slightly soft but not entirely cooked. Add your seasoning and mix well. Then add your cream cheese, cream and minced garlic. 3. Bring to a simmer on medium low and then add your parsley. Immediately remove from the heat. 4. Meanwhile make your melted cheese. Simply tear apart the cheese into a bowl and add milk. Microwave for 30 seconds and mix really well. Depending on the heat you may need to add a little more milk or heat. 5. On an tray, roll out the puff pastry with the baking sheet it is wrapped in. I like to cut it into 4 big slices but you can also make it into 8 smaller slices by doing what I did but cutting it down the middle. 6. Spoon the chicken mixture to one side of each slice and top with the melted cheese, grated cheese and black pepper. Fold over and press down. Then press down securely with a fork. 7. Brush over the egg wash, sprinkle with sesame seeds or all bagel seasoning. 8. Ramadan Recipes - Ulker Biscuit Dessert/Pudding You need: 400ml double cream 200g condensed milk 1 can evaporated milk 1 packet Ulker or 2 - 3 packets le Petit Beurre biscuits Cocoa powder for dusting 1. In a large bowl add the cream and condensed milk and whisk until thick. At this point you can add extras like Nutella, Kiri cheese, crème Carmel (without the powder), custard powder, milk powder etc. 2. In another bowl add evaporated milk. If you added extras to step 1 substitute this for regular milk otherwise it’ll become too sweet. 3. Take a deep dish and add a few spoonfuls of the cream mixture. Dip the biscuits in the milk and start to layer it up. You want to create layers until you have about 5-6, and you can make more! 4. Make the top layer cream, smooth it out and then add cocoa powder.
