High protein high fiber dinner idea - one pot creamy mushroom chickpea orzo 1 box (16 ounces) Barilla® Chickpea Orzo pasta 2 tablespoons extra virgin olive oil 1 medium onion, diced 1 clove garlic, minced 8 ounces mushrooms, sliced 6 cups broth 1/4 cup parmesan cheese, grated 1 cup green peas Handful chopped spinach Instructions: In a large pot, heat olive oil over medium heat. Add diced onion and sauté until onions are translucent, about 3-4 minutes. Add minced garlic and cook until fragrant. Add sliced mushrooms to the pot. Cook until mushrooms are softened, about 5 minutes. Add the chickpea orzo pasta to the pot and cook for a few minutes then add chicken broth and bring to a boil. Cook according to package instructions, stirring occasionally, until the pasta is al dente, usually about 7-9 minutes. Add the green peas and chopped spinach to the pot.
