Cookie Dough Overnight Oats (in a jar) 🍪🍫 Overnight oats are one of my favorite healthy breakfasts (and such an easy way to meal prep)! This one helps reduce food waste by using every last bit of nut butter in the jar, and minimizes the need for extra containers, too! To make, combine👇🏼 • 1/2 cup rolled oats • 2/3 cup plant milk • 1 scoop vanilla protein • 1 tbsp chia seeds • handful chocolate chips * leftover nut butter from the jar 1. Simply mix everything together and store in the fridge overnight! Gut Healthy Potato Salad 🥔🫑🥒 By baking and cooling your potatoes, you increase the resistance starch in them which is an amazing prebiotic for you gut! Prebiotics feed your good gut bacteria, helping your gut microbiome flourish 🌼 1. Bake your potatoes and cool in the fridge (I baked mine at 400 F for about 40 minutes) 2. Make your dressing by blending: - 1 can cannellini beans, drained & rinsed - 1/4 cup hemp seeds - 2/3 cup plant milk - 3 cloves garlic - 1 tbsp Dijon (or 1/2 if you want less tang) - 1 tbsp lemon juice - 1 tbsp apple cider vinegar - salt & pepper to taste 3. Chop and add veggies of choice to the potatoes (I used 1/2 red bell pepper, 1/2 orange bell pepper, 1/2 medium onion, and 3-4 dill pickle spears. Olives & celery are great too) 4.
