Chili Lime Cod & Veggies Meal Prep🍋🟩🌶️ Flavorful, Fun & Low in Fat! This makes 3 meals Ingredients: 3 Cod Fillets Marinade: 3 minced garlic cloves 1 whole lime juiced 1 tsp lime zest 1/2 tsp chili powder 1/2 tsp oregano 1/2 tsp paprika Salt & pepper to taste Sautéed Zucchini & Yellow Squash 1 yellow squash 1 medium zucchini Salt & pepper to taste Avocado spray Make white rice on the side & each meal will get 1/2 cup of rice, 1 cod fillet & about 1/2 cup of veggies. Notes: pre-heat oven to 400 degrees. In a small bowl add all ingredients for the marinade. Mix well. Place cod filets on a baking sheet coat with avocado spray and smother the cod with the marinade. Bake on the top rack for 15 minutes. Meanwhile slice the zucchini & yellow squash and using a medium pan with some avocado spray sauté the veggies with a pinch of salt & pepper. About 2-3 min per side depending on the texture you want to achieve.
