It’s salad season and I’m here for it— everyone should be trying to get more greens in their diet so this is a fun delicious and flavorful salad that you can make into a festive dip. I got this idea from @Cherie and as soon as I saw this video, I ran to the store to get the ingredients because I knew this was going to be delicious. I added green onions to mine and omitted Romaine and instead chose to use spring greens so here are the ingredients for this recipe: 1/4 of a green cabbage, diced- one large cucumber, diced- 2 handfuls of spring greens, chopped, One bunch of green onions, chopped. Dressing: two avocados- one 3rd cup of soaked cashews, one handful of fresh basil, one handful fresh spinach, one tablespoon of nutritional yeast, 1 tablespoon organic maple syrup, a pinch of Celtic sea salt, one large lemon juiced one quarter cup of olive oil and one quarter cup of water, add to blender and blend until smooth. Put the dressing on top of your plated salad- don’t dump the dressing out on the salad or it will just get mushy. It’s best to have a separate bag of the salad and a separate portion of the dressing to save for leftovers for several days. sprinkle hemp hearts on top and add tortilla chips, or you could just eat it the way it is and even add your favorite protein on top.
