In a medium bowl, whisk together all of the ingredients. Let the mixture sit for 5-10 minutes, then whisk again to break up any clumps. 2. Cover the bowl and place in the fridge for 4 hours or overnight. 3. Melt the chocolate chips and coconut oil in 15-20 second intervals, stirring between each, until smooth. 4. Once chia pudding is set, divide into servings (can make up to 2) and drizzle the melted chocolate on top of each serving. Top with crushed cookies and place in the fridge to harden.

COOKIES & CREAM WAFFLES 1 cup almond flour ¼ cup coconut flour 1 tsp baking powder Pinch of salt 3 tbsp Cookies n Cream Granola Butter (add more if prefer sweeter) 2 eggs 1 cup milk 1 tsp vanilla extract Opt. mini white chocolate chips Oil for greasing Glaze: 1 tbsp Cookies n Cream Granola Butter 3-4 tbsp coconut yogurt Crushed cookies 1. In a mixing bowl, combine the flour, baking powder, and pinch of salt. 2. In a separate bowl, mix together the wet ingredients including the granola butter. 3. Pour the wet ingredients into the dry and mix gently until combined. 4. Preheat your waffle iron and lightly grease it with oil to prevent sticking. 5. Pour the batter in and spread it evenly using a spoon. 6. Close the iron and cook for about 10 minutes or until the waffles look golden brown. 7. Carefully remove the waffles and serve with the glaze and maple syrup.
