Happy Plate!! 🥘 Ingredients: • 1 ½ lbs chicken thighs, cut into bite-sized pieces ( I used 4 boneless skinless thighs) • 1 packet taco seasoning (divided) • 3 tbsp olive oil (divided) • 1 small diced onion • 2 cups long-grain @Parish Rice • 1 small can (8 oz) tomato sauce • 4 cups water • 1 tbsp chicken bouillon • Fresh cilantro (optional) • Queso for topping Instructions: 1. Drizzle the chicken thighs with olive oil and season with half a packet of taco seasoning. 2. Heat a little olive oil in a large pot. Add the chicken and brown on both sides for a couple of minutes. Toss in the diced onion and cook until it starts to soften. Remove chicken and onions from the pot. 3. Add 2 tablespoons of olive oil to the pot along with the rice. Stir and cook until the rice is lightly toasted. 4. Stir in the tomato sauce and water. Season with the remaining taco seasoning and chicken bouillon. 5. Bring to a boil and cook for about 5 minutes. Add the chicken back to the pot and mix everything well. Top with cilantro if desired. 6. Cover the pot, lower the heat, and let it simmer for 15-20 minutes without stirring. 7.
