This was one of the best tasting Steaks I’ve had in a long time! The texture was insane! I cooked this on my @schwankgrills from start to finish, and the crust it gave this steak at 1500°F was absolutely perfect! Ingredients: • 1-2 NY strips • Salt • 3 tbsp crispy fried onions • 3 tbsp Gruyère cheese • 1 tbsp Parmesan cheese • 1 tbsp fresh thyme leaves • 2 tbsp melted butter First in season up the NY strips with just salt and set at room temp for 30 mins or so before preheating the Schwank grill! Place meat probes in and cook the steaks for 90 seconds on the first side, then flip, and cook for 3 minutes of so on the back side… or until the internal hits about 105°F. let the steaks rest for 7-10 mins, and they should rise up to about 125°F. While the steak rests, combine all the ingredients for the cheese crust into a bowl, and mix well. Depending on the size of the steaks you may need to double this up! Spread a generous amount of the mixture on each steaks and place it back into the Schwank grill to broil at the lowest temperature level until bubbly and golden brown!
